Roasted Strawberry Buttermilk Cake and why I gave all of my nonstick skillets to the Goodwill…

With youngest daughter home for a visit this week, we had a backyard barbecue on Sunday afternoon and invited our oldest daughter and her family, our nephew and his family, and our youngest’s best friend and her family.

For dessert I made some brownies and this Roasted Strawberry Buttermilk Cake from Joy the Baker

that I found on Pinterest.

It’s a yummy, not too sweet dessert.

I think it would even be a good breakfast coffee cake.

I’m going to try it again with different fruits, maybe some plums, next time.

This recipe is a keeper!

On another note, a while ago I gave all of our nonstick skillets to the Goodwill.

I didn’t like that they are possibly linked to negative health side effects, or that I had to worry about the Hubs overheating them or accidently scratching them when he cooked breakfast, which he likes to do. Smile

I already had a cast iron grill pan, so I bought an 11 inch Lodge cast iron skillet, seen in the photo above, and a round 11 inch griddle pan. (TJ Maxx had them for 11.99)

I researched how to keep the cast iron from rusting, how to clean it and how to keep it well seasoned.

I’m loving it!

I’ve never had crepes turn out better than I did on that griddle pan.

Nothing sticks…eggs, frittatas, pancakes, crepes, cakes, all turn out great and don’t stick!

The key is to never use soap on it, just clean it with hot water.

After that I dry it with a paper towel, then put a little canola oil on a paper towel and wipe it with that.

I will then set it in a warm oven for a few minutes, turn the oven off, and it’s ready for it’s next use.

So, get out your Granny’s old cast iron skillet, or get yourself one, (they’re very affordable), and try this recipe.

  2. Nothing like cast iron. I seem to find all my Lodge skillets at Goodwill! My daddy used to make us Pineapple Upside Down Cake in his iron skillet. I love that memory.

  3. I'm using cast iron again - and I LOVE it! I just wish I had kept the cast iron skillet I had when I got married forty years ago. It would be well seasoned by now. And an antique!

    I'll bet my hubby would Love that cake!

  5. Cast iron is a standby for us too. It sounds funny to clean it differently, but you're absolutely right. That recipe looks real good! So nice to know you came by!

  6. Now I want pineapple upside down cake. I have a cast iron skillet, I just don't use it much. I'm going to have to try it out. :)

  7. I wish you were giving ME that slice of cake, yummy!! Elizabeth, I'm so glad you're now in the cast iron skillet club--it's a good place to be! :) I love mine. I have one that my husband bought for me about 4 years ago. It's large and one that I've seasoned myself. (Although, they only get better with age, you know.) The other one is a 9 in. my Mom gave me that she found at an antique store. She swears that older ones are always the best. So now I have the best of both worlds. Maybe one day when I'm older and have great grandchildren, I can tell them the story that my husband gave me "this" iron skillet that I seasoned throughout the years with the love of cooking.
    I love a good story. :)

  8. I have the directions for seasoning iron pans that leaves them so well seasoned that you can actually wash them in your dishwasher. I can email it to you if you want me to.
