Soft Lemon Sugar Cookies...


The other day, I couldn't get the thought of a soft sugar cookie out of my mind.
But, not just any soft sugar cookie would do.
The cookie that I had in my mind was a delicious soft lemon sugar cookie.


 I adapted a recipe for soft sugar cookies found here.
Here's what I did.



Soft Lemon Sugar Cookies~
Preheat oven to 450 (yes, 450!)

Cream together:
1 cup softened butter
3/4 cup sour cream
2 eggs
1 1/2 cups sugar
1 teaspoon vanilla
1 teaspoon lemon extract
zest of one lemon

Add dry ingredients that have been whisked or sifted together:
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

Chill dough in refrigerator.
Roll chilled dough out on floured surface to no less than 1/4 inch thickness.
Cut out with desired cookie cutter.
Place on lightly greased or "silpat" covered cookie sheet.
Bake in hot oven for 8-10 minutes until bottom of cookie is golden brown.
Cool cookies.

For Lemon Glaze:
In small bowl combine well with a whisk:
juice of two lemons
zest of one lemon
powdered sugar 
(add enough powdered sugar until glaze has about the same consistency as shampoo)
Spoon glaze onto cookies that are on wire racks placed on top of wax paper to catch drips.
Let glaze set before storing cookies in airtight container.




Enjoy with your cup of hot coffee, favorite tea or a glass of cold milk!

    1. I think I just gained three pounds at our church leaders' retreat. A husband and wife from our church that are chefs are doing all the cooking and it's fabulous!

    1. Thanks, Dolly! I was taking Easter photos of my grandkids and asked my oldest granddaughter to take my photo in my Easter dress and it turned out good enough to use on my blog!

  6. My mother makes a wonderful lemony sugar cookie. I don't think this is her recipe because I don't remember the sour cream in there. I need to ask her. If it isn't, I need to try these. This kind of a taste is a favorite of my husband. (Imagine that... a person who prefers this taste to chocolate.)
