Homemade Split Pea Soup...



When it comes to split pea soup, I suppose there are probably three types of people,
those who love it,
those who hate it,
and those who've never tried it.
If you love it but have never made it yourself, it's so easy!
If you've never tried it, give it a go!
It's a delicious inexpensive and nutritious meal!


Ingredients-
1 lb. dried peas
1 medium onion, diced
2 stalks celery, diced
1-2 carrots, peeled and diced
1 cup or so of diced ham
8 cups water
approximately 1 teaspoon salt and 1/2 teaspoon pepper

I always rinse the dried peas in water and look them over to make sure nothing got into them that shouldn't have. 
 There will be a few yellow ones, but that's normal.
Place all of the ingredients into a large soup pot and bring to a boil.
Turn heat to medium low and simmer for an hour or so, stirring frequently.
When all the vegetables are soft and the peas are smooth it's done.
If you prefer a completely smooth soup you can blend it with an immersion blender.
We like it with some small chunks of ham and vegetables so I simply use a whisk to stir it at the end.


To serve,  get some good artisan bread and cut it into large croutons.
Drizzle the bread with olive oil and sprinkle with kosher salt.
Toast in a 425 degree oven. 
Top soup with croutons and enjoy!

  6. I may have to try this. You do make it look so good. I wasn't raised on this, but I know the flavor is wonderful. I think it's the color that gets most of us! This fall/winter I want to have a new soup on hand every week. They just comfort the soul!
