Healthy scones…

I love the healthy recipes I find on the Joseph’s Grainery blog.

I especially like to try them when I have baby granddaughter over.

Her mama likes her to eat healthy foods.

(I like to make her treats!)

This recipe fit the bill for both when she was over one morning.

She thought they were giant “tookies”, (cookies), and gobbled a whole one even though she’s a tiny little thing.

Raisin Oat Cracked Wheat Scones (adapted from recipe from Joseph’s Grainery)

3/4 c all purpose flour
3/4 c whole wheat bread flour
2 tsp baking powder
1/2 tsp coarse salt
3 Tbs packed brown sugar
1/2 c rolled oats
1/2 c raisins (or craisins)
2 Tbs cracked wheat breakfast cereal
3 Tbs unsalted butter, melted
1 egg, lightly beaten
1 c buttermilk (I used 1/2 cup plain yogurt whisked into 1/2 cup nonfat milk)
Directions:  Preheat your oven to 400 degrees.   

In a medium bowl, whisk together the flours, baking powder, salt.

Add and whisk together other dry ingredients.

Add melted butter, lightly beaten egg, and buttermilk, (or in my case yogurt and milk).

Stir until the batter is evenly moistened.

Drop batter in 1/3 cupfuls onto a parchment lined baking sheet, making sure they are at least 2 inches apart.

Bake until golden brown, approximately 15 minutes. 

Best eaten warm and fresh.

Hubs had his with a soft boiled egg…a perfect and simple healthy breakfast.
