Friday's Faves...Homemade Whole Grain Pancake Mix...


I love a good light and fluffy pancake,
but a light and fluffy wholegrain pancake is even better!
This recipe adapted from a recipe by King Arthur flour fits the bill!
It makes enough dried mix for 50-80 pancakes.


Whir 3 1/2 cups old fashioned rolled oats in food processor until fine, but not powder.


In large bowl mix the 
3 1/2 cups oats with
 4 cups whole wheat flour
1 cup all purpose flour
3 tablespoons sugar
3 tablespoons baking powder
1 tablespoon baking soda
1 teaspoon salt



Whisk the dry ingredients together well and store in airtight jar.
I added a chalk label to my jar with the instructions for making one batch of pancakes.

For every cup of pancake mix 
add 1/2 cup milk
1/2 cup plain yogurt
(you can substitute 1 cup buttermilk for the milk and yogurt)
1 egg 
1 tablespoon canola oil
and whisk together.



Healthy AND grandkid approved!
