Friday's Faves...The Best Ugly Cookies You Ever Ate! (Flourless, Butterless Oatmeal Cookies)


If you are a regular reader/follower of my blog you know that we vacationed in southern California in August.
While there we spent a day in the wonderful seaside town of La Jolla.


On the recommendation of our daughter and of Foyer's travel books about the area,
we decided to have our lunch at The Cheese Shop deli.


We parked our car not far from the waterfront and walked to The Cheese Shop.
It was a lot longer of a walk than expected, and while the Hubs was wearing his Adidas,
I was in sandals that were giving me blisters.
When we walked into The Cheese Shop, we promptly walked back out.
(It's not known for its good looks, folks.)
 I decided that I hadn't gotten blisters for nothing, so we went back in.
I'm so glad we did!

A lamb sandwich...yum, yum, yum!

Our kiddos told us that we must try their famous flourless, butterless oatmeal cookies.
We bought four of them.
They're ugly...they look like cookies that you flubbed up the recipe on,
you know, the kind that are flat and spread out a bit too much.
But then you bite into their chewy, caramel-like goodness, and before you know it,
you've eaten three out of four of them!
(OK, I know, but remember I had just been on a LONG walk and had the BLISTERS to prove it...
and I still had to take that same LONG walk back to the car.)

When vacation was over, I became obsessed with finding a recipe for those cookies!
The Cheese Shop guards their secret recipe quite well, 
but this recipe gave me the basic idea that I then tweaked until I think I just about have it right.


Beat three eggs.


Add two cups of brown sugar,  two tablespoons canola oil, a teaspoon of vanilla and a teaspoon of salt.


Add 1 cup sliced almonds and two cups old fashioned rolled oats.


Chill the batter to prevent the cookies from spreading too much.
Drop by scant tablespoons onto parchment paper covered cookie sheet.
(I only make 6 per cookie sheet because of the way these cookies spread.)
Bake at 350 in preheated oven about ten minutes until golden brown.
Slide cookies, still on the parchment paper, onto cooling rack when done.

Betcha' can't eat just one!!!
